Season Rum- Sherry Cask

"The Rum Saison Sherry Cask, with its specific aromatic profile, is the result of a meticulous selection of distillates from two distinct terroirs of the Caribbean islands of Barbados and Trinidad. The intention of the Cellar Master is to highlight the typicality of these terroirs in a perfect balance (40% Barbados, 60% Trinidad), thanks to the richness and power of the distillation of molasses in stills associated with the finesse and lightness of the distillation of sugarcane in columns. DISTILLATION The batches of rums from Trinidad and Barbados are aged for 5 years in their native land in bourbon barrels. REFINING They are then matured in Charente, in barrels that previously contained Cognac for 12 months and finally matured for 3 months in barrels that contained Xeres - Pedro Ximenes. From this original process, the rum gets its delicate fruity aromas. ASSEMBLY The latest creation of the Cellar Master, Saison Sherry Cask is a unique rum, each batch of which has been carefully selected and then matured with particular care to obtain a rich, complex, surprising and innovative aromatic profile. Saison Rum Sherry Cask is then progressively reduced to 42%; no sugar is added. This rum presents an open nose with red fruit fragrances supported by delicate woody scents. On the palate it is well balanced, with notes of stewed red fruits and fresh Morello cherries that give it a lot of flavour. Fine touches of spices harmoniously complete this ensemble. The long finish ends on sweet notes of candied fruits and sherry."
