" Saison Rum Triple Cask Trinidad is the result of a meticulous selection of distillates from the unique terroir of the island of Trinidad. The intention of the Cellar Master is to bring out the originality of this terroir in a perfect balance, thanks to the richness and power of the distillation of molasses in stills, combined with the finesse and lightness of the distillation of sugar cane in columns. AGING The selected rums are aged for 5 years in American white oak barrels, that previously contained bourbon. The aging takes place in Trinidad, taking advantage of the heat and the specific hygrometry of the island which offer to the future rum, by a unique oxidation, an excellent maturity as well as a strong concentration of the aromas. ASSEMBLY The batches of aged rum cross the ocean to France to be blended by the Cellar Master; Jérôme Tessendier. His goal is to reveal the character of Trinidad's terroir through a singular technique, blending the different batches according to their diverse aromatic profiles: floral, fruity and spicy. REFINING Then, the blend will be housed in Jarnac (Charente) in French oak barrels of ""medium grain"" to extract slightly roasted and spicy aromas. Finally, the rums will be refined in ""fine grain"" oak barrels to create a gourmet and harmonious finish. The rum is then progressively reduced to 48%; without adding sugar."
