Sweet orange and Tahitian vanilla jam
Made exclusively for the Tour d'Argent by Stéphan Perrotte, the world's best jam maker in 2015, this artisanal preparation is based on sweet oranges. Tahitian vanilla from Tahaa, a superb and wild island in Polynesia, perfumes the sweet oranges with an extraordinary taste. Stéphane Perotte, artisan jam maker, is a passionate man who is always looking for new recipes.
Mastering traditional know-how and the science of cooking, he is on the lookout for fruits, spices, aromatic plants, unknown or rare, in order to bring back their authentic tastes. He opened his jam-making business in Vaudelnay and continued his success over the next two years: he is the only jam-maker in France to have won the Best Jam-Maker of France competition (2014) and the World Jam Championship (2015).
