To sublimate the quality of the fruit, Le Roy René confectioners gently heat it with sugar and pectin, which they then stir in a cauldron to extract the pectin naturally present in the fruit and preserve all its aromatic compounds. The fruit paste is then cut by hand using a guitar, and glossed with a brush.
